Ok....so it's been awhile. It's going to be harder to stick to consistent blogging than it is to stick to my vegetarian diet! I'll give it my best shot.

Meat-free eating is going well. The biggest challenge continues to be making sure we get enough protein. Greek yogurt is my latest "go to!" 13 grams of protein...can't beat that!

Dinner tonight is bowtie pasta with vodka sauce topped with crispy, crunchy tofu. Salad and sliced strawberries as sides. Never sauteed tofu before. The key is getting most of the moisture out. Tonight's recipe called for cubing, and tossing in flour, garlic powder, salt and pepper and nutritional yeast, which I don't have. I tossed in a few other spices/herbs to make up for it! I sampled two cubes....delish!

Happy New Year!

The Christmas stuff is put away, tree is down, first meal of the year cooked/devoured.

Easy first day in terms of eating meat-free! Breakfasts and lunches are easy, so I won't really spend time discussing those. Dinner is the one that will be hardest...and most challenging when it comes to keeping a variety, fresh, and packed with protein.

Tonight: 1/1/2012:

Vegetable quiche (asparagus, red pepper, zucchini)
Sauteed polenta
grapefruit
bisquits

David still home....so I needed plenty of food (college boys eat A LOT!) . We ate all but 1 slice of the quiche. As Joe's mom would say, "It went up!"

1 day down, 365 to go (leap year...)

T minus 8 hours

So my daughter, Laura, decided that she wanted to be a vegetarian for a year. She included this on her "bucket list" and decided 2012 was the time to do it! Since I'm not a huge carnivore, and do most of the cooking around here, I'm in, too. Sure, why not!? It should be an adventure at the very least.

My health is far from stellar. I've got a list of allergies the length of my arm, chronic itching, insomnia, and 20 unwanted pounds, to list a few. I'm looking forward to the new year, and the new food choices that I will have to make, all in order to hopefully give me a jump start on the "new me!"

Laura, on the other hand, is just doing this for the fun of it. She's a month shy of 17, tall, georgeous, and a size 2. WOW!! OK...so she and I are obviously in this for different reasons....but we both have 1 in common: we're in it together...and we're excited about it!

I stocked up on basic vegetarian ingrediants at Trader Joe's today. To help us get started, there were two vegetarian quick and easy cookbooks under the Christmas tree for us. And of course, there's the endless resourse called "the internet."

Advice is welcome.
